KI NO BI Kyoto Dry Gin is created with Japanese botanicals such as yellow yuzu from the north of Kyoto Prefecture, hinoki wood chips (Japanese cypress), bamboo, gyokuro tea from the Uji region and green sanshō (Japanese peppercorn) berries. Using a rice spirit base and peerless water sourced from Fushimi, the famous sake-brewing district, KI NO BI is bottles at 45. This allows the spirit to rest, giving time for the alcohol and water to marry together and allowing the distinct flavours to harmonise further.
