Arrange the potatoes in a single layer on a lined cookie sheet. Freeze them for least four hours. They can also be frozen overnight.The best potatoes for storing are Elba, Katahdin, Burbank Russet, and German Butterball varieties, which remain fresh for 8 months when stored correctly. Other varieties are also suitable but can be stored for shorter periods. Carefully choosing the potato variety is key for long-term storage.

Take a look at the potatoes you’ve stored every so often. If a potato starts to rot it can spread this to others, so throw it out. Softness, shriveling and mold all indicate a potato should be removed from the store. Eat the potatoes when they are ready as you normally would do. This is roughly at the beginning of July.The above method should enable storage of new potatoes, in edible condition, for three to four weeks after harvest.
