There is a great drink, a new classic, called “Naked and Famous” which was created in the award winning bar Attaboy in NYC which we love to make.

White salt should now change to a light creamy tone. Now put it in a small bowl. Be careful, it does not steam, but it is very hot. Add a spoonful of sugar and half a spoonful of hot chilli powder to the three spoonfuls of heated salt. In Asian cuisine, the same amount of glutamate is added. Glutamate is a flavor enhancer that is not appreciated by all Europeans or Americans. Rounding 🌶To make the hot wings, mix together the oil and baking powder in a large bowl with most of the chilli salt, reserving 1 heaped teaspoon for the watermelon. Add the wings, coating in the marinade. Leave to marinate for at least 2 hours, ideally overnight. An oaked, full body French chardonnay is ideal for a lightly spiced dish. It works best in a wok: Put four tablespoons of normal salt without oil in a hot wok pan. Stir the salt constantly over medium heat. By constantly moving, the salt gets even heat. Store your salt & pepper seasoning in sealed spice jars. You can either wash out an old spice jar and once it is fully dry, fill it with your seasoning mix or treat yourself to these fancy spice jars. Just be sure that whatever container you use is airtight.

So great news if this is you, as none of my recipes contain MSG. This spice mix is also free from nuts, dairy, gluten & egg too. Jump to: Monosodium Glutamate or MSG as it is more widely known, is a flavour enhancer that is commonly added to Chinese food, along with canned soups and lots of other processed foods. I usually prefer a saucy dish (ooh er!) when I'm making Chinese food, but this one is so moreish that I can never say no when it's on the menu. Meanwhile, make the pesto. Blanch the basil in boiling water for 30 seconds, then scoop out and drop straight into a bowl of iced water, to cool it down rapidly and set the colour. It’s perfect for finishing a dish with a nice hit of heat, savory, and salty, just before serving. Season your favorite pasta dish with Chili Salt just before serving. The next step in making our preserved chillies in oil is to soak the chopped chillies in a salt and vinegar solution overnight. This adds flavour, as well as helping with the preservation. Other suggestions are red peppers, thinly sliced carrot, or courgette. Small florets of broccoli or chopped up baby corn are also nice additions. Chilli salt combines the salt in the soup with the fire of life. A spice mixture of sea salt and chili powder is easy to make. With fresh chillies it can be conjured up in the twinkling of an eye. A hot, tingling Fleur de Sel including chili tastes more brilliant than any spice on its own. This spice mix recipe can also be used to season soups, sauces and stews. For me, when it comes to the best recipe, two stand out way above the rest. This Cambodian chilli sugar salt recipe makes one of Cambodia’s most beloved condiments. While people can easily make this at home, Cambodians love nothing more than spotting a vendor of sour fruits on their street or in a park, and hurrying over to choose a selection of fruit sprinkled with chilli salt or fruit doused in a fiery chilli sauce.

My favourite thing -- Avocado Toast with this chili salt (instead of regular sea salt). It is the best way to start your day! Fresh chilies do have a bright and fruity flavor that dried ones just don’t have, so I do recommend going with a fresh one. Can I make this with a dried chili and not soak the chili? The mortar and pestle is a great tool to crush the Thai Chili so all the oils are released. The consistency you are aiming for is a slight liquid with a red-orange paste. The pepper skin should be all finely crushed. What is the difference between Thai Chili Salt (Prik Glua) vs Vietnamese Chili salt (Muoi Ot)?

Although I didn't use any fresh herbs in the cooking, it doesn’t mean that you can’t top off the finished dish with a touch of green. Making these preserved chillies in oil is a very, very easy process, requiring only a few ingredients. If you grown your own chillies, it’s a perfect way to use up summer’s bounty, whatever the colour of your chillies.
