Charcoal pizza ovens BBQ sauce - This is where so much of the flavour of the pizza comes from, so you want it to be the best BBQ sauce possible. We made our own Homemade BBQ Sauce, and it's so simple to make. You can use a store bought one, however go for a good quality one, as you will be able to taste the difference. Cheese - We used a mixture of cheddar and mozzarella. Use an extra mature cheddar, as the stronger flavour means you can use less of it, making it a lower in calories pizza. Rotate it regularly The strongest heat usually comes from one direction, especially in gas and wood-fired ovens. You'll want to rotate the pizza a few times during cooking to make sure it cooks evenly. Once every 30 seconds is a good rule of thumb, but keep an eye on it while it cooks.
