Now use a needle or something similar to pierce the top of the okra in several places. This will allow the vinegar to get inside fully. Photo by Holly A. Heyser We’re wondering – do you think we can reuse the brine since we just made today? My husband is thinking of using for other veggies from the garden – jalepenos and red peppers? Grind the Seeds and Combine. Grind the seeds into coarse powder in a spice grinder, or use a mortar and pestle. Add the ground seed mixture to a small bowl. Add turmeric, garlic powder and onion powder (or asafoetida, if using) and mix to combine. Thank you so much for your kind words! I add the parsley at the same time as the other spices, you were absolutely correct. You’ll have to tell me what you think once you try them, and if you have any questions feel free to reach out! Thanks so much for your support!

It’s also important to note that the cucumbers will cook a bit more as they sit upside down on the counter. They’re simple to make and scalable so whether you have just a handful of ripe cukes from your garden or are making a dozen jars you can easily make just what you need. Serranos are spicier than jalapenos, so you may want to include more to reach the same level of heat, whereas cayenne, thai, and (heaven forbid) habanero or ghost peppers are spicier, so you’d want to reduce the number accordingly for those. cups sliced green chilies I am using a combination of jalapeno peppers and serrano peppers - See NOTES on peppers I tried a couple different ingredients for adding some spice — either dried red pepper flakes, which are nice because you probably already have some in your pantry, or some fresh peppers. Both worked but I think I liked the version with fresh peppers a bit better. I’m including quantities for either option in the recipe card so you can choose what works for you — if you’re growing peppers in your garden along with cucumbers, this would be a great use for both! The Oil. Use a neutral oil for this recipe as not to affect the flavor of the seasonings and the chili peppers. Mustard oil is a nice compliment to the mustard seeds, though any vegetable oil will do. Olive oil will work, but has a more distinctive flavor. This recipe is exactly what we've been looking for. We have tried a few and this has produced the best results. Cut your cucumbers into spears or slices, stuff into clean pint-size mason jars along with some fresh dill and either your fresh peppers or red pepper flakes, spoon over the spices and fill the jar with brine. Oh, my word, everything! The most obvious answer is to use them as a taco topper (say, for my gochujang cauliflower tacos or fried avocado tacos) - but you can also use them in salads (for instance, my summer spinach and avocado salad). But my favorite? Add them to avocado toast. You simply won't go wrong! 🍴 Serving and storage suggestions Place all the veg in a sterilised airtight jar, add 125ml of water, along with the vinegar, salt, sugar and herbs and spices, if using. Close the lid and give it a good shake.

Immediately pour the brine into the bowl with the jalapenos and cucumbers. Cover the bowl with a paper towel or two, pressing down against the liquid to keep everything submerged in the brine. You can also include other fragrant ingredients in the mix, such as garlic, fresh chilli or ginger, turmeric or horseradish. Seeds. Use 3 tablespoons yellow mustard seeds, 1 teaspoon coriander seeds and 1 teaspoon cumin seedsYou'll want your onions sliced quite thinly, so I suggest using a sharp Chef's knife or a Mandoline slicer for this step. You can either slice it in whole circles, or chop the onion into halves, and then slice those pieces. Store open jars in the refrigerator. Once you open a jar, store it in the refrigerator versus at room temperature. Once the seal is broken, the cucumbers become much more perishable! Thank you so much, this was such a sweet comment to read this morning! I’m so glad you enjoyed this article, it’s a fun recipe to make. Thank you for your support and your fantastic rating! I hope you enjoy, let me know how it goes! For spears: Slice your cucumber in half lengthwise, then slice the halves into quarters. Finally, slice the quarters into eighths so they yield wedge-shaped spears. If you’re using a long cucumber, cut all the slices in half through the middle so they fit into your jar. Bake the Jars: Next, preheat the oven to 250°F. Place the jars in the oven for about 20 minutes until the cucumbers turn a shade darker.
