Palate: Savoury elements sit up front - oily juniper, cardamom and kitchen herbs. Clean lemon zest and star anise notes cut through the herbaceousness. Starting as a blank canvas, the base spirit is distilled over and over until it is clean, fresh and ready to take on the vibrant array of flavours from the island’s rich palate.

As Wee Betty is a bit on the small side, there’s going to be limited production of the gin initially, but it will be ramped up as the distillery is about to install a second dedicated gin still in a new stillhouse.Unique to Tobermory Gin, a splash of spirit from the Tobermory whisky stills is added, creating a standout character, unlike any other. There are 13 botanicals that go into the Hebridean Gin and these include juniper, tea, heather, elderflower, and sweet orange peel, which are fresh from the island if they grow there. There’s also an intriguing addition to both make the gin different and to connect it with their whisky heritage, as they add a drop or two of spirit from the whisky stills into the gin. Fresh juniper balanced with sweet orange and lemon, hints of coriander, gentle herbs and spices, with a luxurious, creamy mouth-feel and a subtle hint of sweet malt. Rich creamy mouthfeel, sweet lemon infused rosehip with a bitter balance of Rowan berry, floral hints of heather and a warming ginger spice.

We add a splash of spirit from the Tobermory whisky stills to Grain Neutral Spirit to make the base spirit for our gin. All our botanicals including heather, Hebridean tea, juniper and sweet orange peel, are steeped for a mimimum of 24 hours in the base spirit.
